- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until smooth but slightly chunky.
- Whisk in the eggs, honey or maple syrup, and salt until well combined.
- In another bowl, mix the almond flour, baking soda, and cinnamon.
- Gently fold the dry ingredients into the wet mixture until just combined; do not overmix!
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes or until a toothpick comes out clean.
- Let cool before slicing and enjoy!
Notes
Ripe bananas are key for natural sweetness. Consider adding walnuts, chocolate chips, or dried fruit for extra flavor. Store in the fridge for up to a week or freeze for up to three months. Reheat slices in the toaster or microwave.
