Ingredients
  

For the Baked Cod
  • 4 fillets cod fillets Fresh or thawed
  • 1 can coconut milk
  • 1 whole lemon (juiced and zested)
  • 2 tablespoons olive oil For sautéing
  • 2 cloves garlic (minced)
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add minced garlic, cooking until fragrant.
  3. Stir in the coconut milk, lemon juice, and zest, and season with salt and pepper.
Baking
  1. Place the cod fillets in a baking dish and pour the coconut lemon sauce over them.
  2. Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  3. Garnish with fresh parsley and serve with rice or steamed vegetables.

Notes

For best results, don't overbake the cod; it should flake easily but still be moist. You can also swap cod for shrimp or chicken if desired.
