Ingredients
  

For the Salmon Balls
  • 1 pound salmon fillets, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 large egg, beaten
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
For the Avocado Sauce
  • 2 avocados
  • 2 tablespoons lime juice
  • 1/4 cup Greek yogurt
  • Salt to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, flake the salmon fillets and mix with breadcrumbs, green onions, beaten egg, Dijon mustard, lemon juice, salt, and pepper.
  3. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 15-20 minutes, or until golden brown.
Avocado Sauce
  1. For the avocado sauce, blend avocados, lime juice, Greek yogurt, and salt until smooth.
  2. Serve the baked salmon balls warm with the creamy avocado sauce.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days and can be frozen for up to 2 months. Reheat in the oven for the best texture.
