  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Whole wheat flour can be used as a healthier option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and combine.
  6. Add the flour and stir until just combined. Don’t overmix!
Baking
  1. Pour the batter into a greased 4x8 inch loaf pan.
  2. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  3. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, consider throwing in some chopped nuts or chocolate chips. Store the banana bread at room temperature for 3-4 days, or freeze for longer storage. Reheat slices in the microwave for a quick warm-up.
