  • 2 pieces salmon fillets Fresh or thawed from frozen
  • 1 cup cooked rice Use leftover rice for quicker prep
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version
  • 2 tablespoons sweet chili sauce Ensure it's gluten-free if needed
  • 1 tablespoon sriracha Adjust to taste for spice preference
  • 1 teaspoon lime juice Fresh lime juice is best
  • to taste Salt and pepper Season salmon fillets
  • as needed Green onions for garnish Adds crunch and flavor
  • as needed Vegetables of choice (e.g., cucumber, avocado, edamame) Use whatever you have on hand

Method
 

Preparation
  1. Cook the rice according to package instructions and set aside.
  2. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper to create the Bang Bang sauce.
  3. Season the salmon fillets with salt and pepper.
Cooking
  1. In a pan over medium heat, cook the salmon for about 4-5 minutes on each side or until cooked through.
  2. Once cooked, glaze the salmon with the Bang Bang sauce.
Assembly
  1. Assemble the bowls by placing rice at the bottom, topping with salmon, and adding desired vegetables.
  2. Drizzle more sauce on top and garnish with green onions. Serve immediately.

Notes

Leftovers can be stored in the fridge for 2-3 days. To reheat, microwave salmon and rice for a minute or two. For meal prep, cook components separately and assemble before eating.
