Ingredients

Main Ingredients
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3-4 medium bananas (or 2 large bananas) Use overripe bananas for best flavor.
  • 1 tsp vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line two 8×4 bread pans with parchment paper or grease well with butter or baking spray.
  2. In a medium-sized bowl, mash the bananas with a fork until they’re well mashed (a few bits for texture are okay!). Set aside.
  3. In a separate bowl, use a hand mixer or standing mixer to cream the butter and sugar together until fluffy.
  4. Add in the eggs and cream until well combined.
  5. Mix in the flour, baking soda, and salt until just combined.
  6. Finally, fold in the mashed bananas and vanilla extract until everything is combined.
Baking
  1. Divide the batter evenly between the two bread pans and bake for 35-40 minutes, or until the tops are puffed, browned, and a cake tester comes out clean.
  2. Allow the bread to cool for about 5-10 minutes in the pan, then transfer to a wire rack to continue cooling.
Serving
  1. Serve warm, room temperature, or cold. Enjoy it plain or with a little butter!

Notes

For added flavor, drizzle with honey or sprinkle with cinnamon. Store leftovers in an airtight container for 2-3 days at room temperature or refrigerate up to a week.
