Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt, pepper, and garlic.
  4. Sear the chicken in the skillet until golden brown on both sides (about 4-5 minutes per side).
  5. Once browned, add in the blueberries, thyme, and lemon juice to the skillet.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let it rest for a few minutes before serving.

Notes

This dish keeps well in the fridge for about 3-4 days. Store in an airtight container. For longer storage, you can freeze it for up to 3 months. Reheat gently in the oven or microwave, adding a splash of lemon juice to freshen it up. Sear the chicken to that perfect golden brown; don’t rush it! Consider switching blueberries for blackberries or cherries for a fun twist.
