Preparation
- Preheat your oven to 375°F (190°C).
- In a large ovenproof skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt, pepper, and garlic.
- Sear the chicken in the skillet until golden brown on both sides (about 4-5 minutes per side).
- Once browned, add in the blueberries, thyme, and lemon juice to the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for a few minutes before serving.
Notes
This dish keeps well in the fridge for about 3-4 days. Store in an airtight container. For longer storage, you can freeze it for up to 3 months. Reheat gently in the oven or microwave, adding a splash of lemon juice to freshen it up. Sear the chicken to that perfect golden brown; don’t rush it!
