Preparation
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer the cheese and pesto.
- Top with the second slice of bread, buttered side up.
Cooking
- Heat a skillet over medium heat and place the sandwich in the skillet.
- Cook until the bread is golden brown and the cheese has melted, about 2-4 minutes per side.
- Serve hot.
Notes
For extra flavor, add sliced tomatoes or spinach. Store leftovers in the fridge for up to 3 days or freeze for up to a month. Reheat in a skillet for best results.
