  • 2 slices slices of bread Use your favorite type of bread.
  • 2 slices slices of cheese (e.g., cheddar or mozzarella) Cheese can be mixed for variety.
  • 2 tablespoons basil pesto Fresh pesto is recommended.
  • as needed tablespoons Butter For spreading on the bread.

Method
 

Preparation
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side of one slice, layer the cheese and pesto.
  3. Top with the second slice of bread, buttered side up.
Cooking
  1. Heat a skillet over medium heat and place the sandwich in the skillet.
  2. Cook until the bread is golden brown and the cheese has melted, about 2-4 minutes per side.
  3. Serve hot.

Notes

For extra flavor, add sliced tomatoes or spinach. Store leftovers in the fridge for up to 3 days or freeze for up to a month. Reheat in a skillet for best results.
