Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until smooth.
  3. Stir in the shredded cheese and diced veggies.
  4. Grease a muffin tin with cooking spray or oil.
  5. Pour the egg mixture into the muffin cups, filling them about 3/4 full.
Baking
  1. Bake for 25-30 minutes or until the egg bites are set and lightly golden on top.
  2. Allow to cool slightly before removing from the tin.
