Preparation
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla; mix until well combined.
- Carefully stir in boiling water (batter will be thin).
- Divide batter evenly between prepared pans.
Baking
- Bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
Filling and Assembly
- To make the filling, whip together mascarpone cheese, heavy cream, and powdered sugar until stiff peaks form.
- Once cakes are cool, place one layer on a serving plate and spread cherry filling over the top.
- Add a layer of mascarpone mixture, then place the second cake layer on top.
- Cover the entire cake with chocolate ganache and garnish with chocolate shavings or cherries as desired.
Serving
- Slice and serve to enjoy!
Notes
Use room temperature ingredients for best mixing. Chill the ganache before spreading for easier application.
