Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1 cup whole milk room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water be careful, batter will be thin
For the Filling and Topping
  • 1 cup cherry filling
  • 1 cup mascarpone cheese
  • 1 cup heavy cream for whipping
  • 1/2 cup powdered sugar
  • 1 cup dark chocolate ganache for frosting

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla; mix until well combined.
  4. Carefully stir in boiling water (batter will be thin).
  5. Divide batter evenly between prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
Filling and Assembly
  1. To make the filling, whip together mascarpone cheese, heavy cream, and powdered sugar until stiff peaks form.
  2. Once cakes are cool, place one layer on a serving plate and spread cherry filling over the top.
  3. Add a layer of mascarpone mixture, then place the second cake layer on top.
  4. Cover the entire cake with chocolate ganache and garnish with chocolate shavings or cherries as desired.
Serving
  1. Slice and serve to enjoy!

Notes

Use room temperature ingredients for best mixing. Chill the ganache before spreading for easier application.
