Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, combine the cottage cheese, eggs, oil, and vanilla extract. Mix well.
- In another bowl, stir together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the blueberries gently.
Baking
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before enjoying warm.
Notes
Serve warm with butter or honey. Store in an airtight container in the fridge for up to a week or freeze for up to three months. Options to swap cottage cheese for Greek yogurt or add lemon zest for flavor.
