Ingredients

For the quiche
  • 2 teaspoons butter or oil Use a non-stick skillet.
  • 1 cup ham, chopped
  • ½ cup onion, diced
  • 2 cups broccoli, cut into bite-size pieces
  • 1 cup shredded cheddar cheese Use non-pre-shredded cheese for best melting.
  • 6 large eggs Can substitute with half egg whites.
  • 1 cup heavy whipping cream or blended cottage cheese See recipe notes for options.

Method

Preparation
  1. Preheat the oven to 400°F and place the oven rack in the center position. Grease a 9-inch pie pan.
  2. Over medium heat, melt the butter (or add the oil) in a medium-sized skillet. Sauté the onion until soft, about 4-5 minutes.
  3. Add the chopped broccoli to the bottom of the pie pan, then layer the sautéed onions and ham on top. Sprinkle with shredded cheddar cheese.
  4. In a small bowl, whisk together the eggs and heavy whipping cream (or blended cottage cheese) and pour over the vegetable and cheese mixture.
Baking
  1. Bake for 30-35 minutes on the middle rack until the eggs are set. Let cool slightly before serving.
