  • 3 ripe bananas, mashed Use overripe bananas for the best sweetness.
  • 1/2 cup unsalted butter, browned Melt the butter first for browning.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar Adjust sweetness to taste.
  • 1 large egg Can be swapped for a flaxseed mix for a vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Don't overmix the batter.
Mix-ins
  • 1 cup chocolate chips Can substitute with nuts or dried fruit.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed bananas and browned butter, mixing well.
  3. Add the brown sugar and granulated sugar, and mix until combined.
  4. Stir in the egg and vanilla extract.
  5. In another bowl, whisk together the baking soda, salt, and flour.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  7. Fold in the chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with a pat of butter or drizzle with honey. Store covered at room temperature for up to 3 days, or refrigerate for a week. Slices can be frozen for up to 3 months.
