Ingredients
  

For the Cookies
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure the butter is softened for best results.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Filling
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
For Dusting
  • Powdered sugar Use for dusting before serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually stir in the dry ingredients until just combined.
  6. In a separate bowl, mix the ricotta cheese with the mini chocolate chips.
  7. Scoop out the cookie dough onto a baking sheet lined with parchment paper, making an indentation in the center of each cookie.
  8. Fill the indentation with the ricotta mixture.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Let cool, then dust with powdered sugar before serving.

Notes

Chill the dough for 30 minutes if you want a thicker cookie. For a fun twist, substitute mini chocolate chips with dried fruit or add chopped nuts. You can use mascarpone for a richer filling and citrus zest for flavor variations.
