  • 1 piece pie crust
  • 6 pieces eggs
  • 1 cup milk
  • 1 cup mozzarella cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a pie dish and set aside.
  3. In a large bowl, whisk together the eggs and milk until well combined.
  4. Stir in the mozzarella cheese, cherry tomatoes, and basil. Season with salt and pepper.
  5. Pour the egg mixture into the pie crust.
  6. Drizzle with olive oil.
Cooking
  1. Bake for 35-40 minutes or until the quiche is set and a light golden color.
  2. Let cool slightly before slicing. Enjoy warm or at room temperature!

Notes

For best results, pre-bake the crust slightly to ensure it stays flaky. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat in a preheated oven.
