  • 2 slices cheese (cheddar or mozzarella)
  • handful fresh greens (lettuce or spinach)
  • 2 slices bread (your choice)
  • 1 tbsp butter or olive oil (for toasting) Use butter for a richer flavor.

Preparation
  1. Start by grilling the chicken breasts until they are cooked through and tender.
  2. While the chicken is grilling, slice the avocado and cheese.
Assembly
  1. Once the chicken is done, layer it with the sliced avocado, cheese, and fresh greens on one slice of bread.
  2. Top with the second slice of bread.
Cooking
  1. Heat a skillet over medium heat and add butter or olive oil.
  2. Place the sandwich in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
Serving
  1. Remove from the skillet, slice in half, and serve warm.

Notes

For an extra kick, add bacon or spicy chipotle mayo. Store leftovers in the fridge for up to 3 days, keeping components separate to maintain crispiness.
