Ingredients
  

For the chicken meatballs
  • 1 lb ground chicken
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 1/4 cup breadcrumbs
For the garlic yogurt sauce
  • 1 cup yogurt
  • 2 cloves garlic, minced
  • 1 large lemon, juice only
  • to taste salt

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, onion, garlic, parsley, cumin, coriander, paprika, salt, pepper, egg, and breadcrumbs. Mix until well combined.
  3. Shape the mixture into small logs or balls and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 20-25 minutes or until golden brown and cooked through.
  2. While the meatballs are baking, prepare the garlic yogurt sauce by mixing yogurt, garlic, lemon juice, and salt in a bowl.
  3. Serve the meatballs in wraps, salads, or on their own with the garlic yogurt sauce on the side.

Notes

For extra moisture, add a tablespoon of olive oil into the mix. If you’re out of breadcrumbs, crushed crackers or oats work just as well. Serve with toasted pita chips for an extra crunch factor! Don’t overbake them; they should be golden but not dried out. You can also customize these meatballs with different spices or make them vegan by using lentils or chickpeas.
