Ingredients

For the Shrimp
  • 1 pound large shrimp, peeled and deveined Use large shrimp for the best texture.
  • 1 cup shredded coconut Use fresh grated coconut for a tropical flair.
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying Ensure the oil is hot enough for frying.
  • Dipping sauce (sweet chili sauce or a zesty sauce of choice) Sweet chili sauce is a classic pairing.

Method

Preparation
  1. In a bowl, whisk together the flour, garlic powder, salt, and black pepper.
  2. Set up your breading station with flour, beaten eggs, and a coconut-breadcrumb mix.
  3. Dip each shrimp into the flour, then the egg, and finally coat in the coconut-breadcrumb mixture.
Cooking
  1. In a deep skillet, heat oil over medium-high heat.
  2. Fry the shrimp in batches until they are golden-brown, about 2-3 minutes per side.
  3. Remove the shrimp and drain on paper towels for that crispy finish.
Serving
  1. Enjoy warm with your favorite dipping sauce!

Notes

For extra crunch, freeze the breaded shrimp for 30 minutes before frying. You can prep the shrimp and bread them ahead of time, then fry when you’re ready to serve.
