Ingredients
  

For the Cake
  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Can substitute with 1/2 cup unsweetened applesauce for vegan option.
  • 1 cup whole milk Can substitute with almond or oat milk.
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Ensure to stir in carefully.
  • 1 zest orange
For the Frosting
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, vanilla extract, and orange zest. Mix on medium speed for 2 minutes.
  4. Stir in boiling water (the batter will be thin!).
  5. Pour batter into prepared pans and bake for 30-35 minutes.
  6. Allow the cakes to cool for 10 minutes in the pans, then turn out onto wire racks to cool completely.
Frosting
  1. For the frosting, beat the butter until creamy. Gradually add powdered sugar and beat until smooth.
  2. Add heavy cream, orange zest, and vanilla, mixing until fluffy.
Assembly
  1. Once the cakes are cooled, spread frosting on top of one layer, place the second layer on top, and frost the top and sides of the cake.
  2. Decorate as desired and serve.

Notes

For extra zing, double the orange zest. Store in the fridge for 3-5 days. Can freeze for about a month.
