Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, vanilla extract, and orange zest. Mix on medium speed for 2 minutes.
- Stir in boiling water (the batter will be thin!).
- Pour batter into prepared pans and bake for 30-35 minutes.
- Allow the cakes to cool for 10 minutes in the pans, then turn out onto wire racks to cool completely.
Frosting
- For the frosting, beat the butter until creamy. Gradually add powdered sugar and beat until smooth.
- Add heavy cream, orange zest, and vanilla, mixing until fluffy.
Assembly
- Once the cakes are cooled, spread frosting on top of one layer, place the second layer on top, and frost the top and sides of the cake.
- Decorate as desired and serve.
Notes
For extra zing, double the orange zest. Store in the fridge for 3-5 days. Can freeze for about a month.
