  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 large egg Can be replaced with flaxseed meal or applesauce for vegan variation.
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup butter Melted.
Crumb Topping
  • 1/2 cup brown sugar Can substitute with regular sugar and a bit of molasses.
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 1/4 cup butter Melted for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a bowl until smooth.
  3. Mix in sugar, egg, and melted butter.
  4. Add flour, baking soda, and cinnamon, combining until just mixed.
  5. Transfer the batter to the prepared loaf pan.
  6. In a separate bowl, mix brown sugar, flour, cinnamon, and melted butter for the crumb topping.
  7. Sprinkle the crumb topping over the batter.
  8. Bake for 60 minutes or until a toothpick comes out clean.
  9. Cool, slice, and enjoy!

Notes

Store in an airtight container at room temperature for up to three days, or freeze for up to two months. Thaw overnight in the fridge or microwave to warm.
