  • 3 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can be substituted for vegan options.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can be replaced with whole wheat for a healthier version.
Cinnamon Filling
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons milk Use a plant-based alternative for vegan option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas with the melted butter.
  3. Stir in the baking soda and a pinch of salt.
  4. Add the sugar, beaten egg, and vanilla extract, mixing until well combined.
  5. Gradually add the flour, mixing just until incorporated.
Cinnamon Filling
  1. In a separate bowl, combine cinnamon and brown sugar to create the filling.
Assembly
  1. Pour half of the banana bread batter into the prepared loaf pan.
  2. Sprinkle half of the cinnamon filling over the batter.
  3. Add the remaining batter on top, then sprinkle the rest of the cinnamon filling.
  4. Use a knife to gently swirl the filling into the batter.
Baking
  1. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  3. For the glaze, whisk together powdered sugar and milk until smooth, then drizzle over the cooled banana bread.

Notes

Store in the fridge for about 3–5 days or freeze for up to 3 months. Reheat in the microwave for best results.
