  • 1/2 cup protein powder Use your favorite flavor
  • 1/2 tsp baking powder Leavening agent

  • 1 cup Greek yogurt Can substitute with plant-based yogurt
  • 1/4 cup honey or maple syrup Sweetener of your choice
  • 1/2 cup unsweetened applesauce Moisture and sweetness

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the oats, Greek yogurt, protein powder, honey or maple syrup, applesauce, cinnamon, baking powder, and salt until well combined.
  3. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 15-20 minutes or until a toothpick comes out clean.
  2. Allow to cool for a few minutes before drizzling with icing.

Notes

These muffins stay fresh for up to 5 days in the fridge when stored in an airtight container. For a make-ahead option, bake a double batch and freeze. They last for about a month; just reheat before enjoying. Pro Tip: Let muffins cool before icing to prevent melting.
