  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
Wet Ingredients
  • 0.5 cups orange juice Freshly squeezed
  • 0.25 cups vegetable oil
  • 1 large egg Can substitute with a flax egg for a vegan option
  • Zest of 1 orange For added flavor

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together orange juice, oil, egg, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
Baking
  1. Fill each muffin cup about 2/3 full with the batter.
  2. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool for a few minutes before transferring to a wire rack.

Notes

These muffins can be enjoyed warm with butter or served alongside a salad. Store in an airtight container for 3-4 days or freeze for up to 3 months.
