Preparation
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together orange juice, oil, egg, and orange zest.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
Baking
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
These muffins can be enjoyed warm with butter or served alongside a salad. Store in an airtight container for 3-4 days or freeze for up to 3 months.
