  • 3 pieces ripe bananas Use overripe bananas for maximum sweetness.
  • 1/3 cup melted butter Can swap half for yogurt for a richer flavor.
  • 1/2 cup sugar
  • 1 large egg, beaten For a vegan option, use flaxseed instead.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips Can substitute for peanut butter chips if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 4 x 8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Stir in the flour until just incorporated.
  7. Fold in the chocolate chips.
  8. Pour the batter into the greased loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with butter or top with a scoop of vanilla ice cream. Can store in an airtight container for 2-3 days or in the fridge for up to a week. Freezes well for up to 3 months.
