Pasta and Vegetables
  • 8 oz pasta (such as rotini or penne) Cooked al dente
  • 1 cup cherry tomatoes, halved Fresh and vibrant
  • 1 cup fresh mozzarella balls, halved Opt for mini mozzarella balls
  • 1 cup fresh basil leaves, chopped For a fresh taste
Dressing
  • 1/4 cup olive oil Extra virgin preferred
  • 2 tablespoons balsamic vinegar To add tanginess
  • to taste Salt and pepper Adjust according to preference

Method
 

Preparation
  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to coat.
  5. Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

Letting the salad chill allows the flavors to meld together beautifully. Serve with crusty garlic bread or alongside grilled chicken for a complete meal. Store leftovers in an airtight container in the fridge for up to 5 days.
