  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (e.g., cheddar or mozzarella) You may use your favorite type of cheese.
Seasoning

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a pie dish or quiche dish.
  2. In a mixing bowl, combine the cottage cheese, eggs, and milk. Whisk until well combined.
  3. Stir in the chopped spinach, shredded cheese, salt, pepper, and optional spices.
  4. Pour the mixture into the prepared dish.
Baking
  1. Bake for 30-35 minutes, or until the quiche is set and lightly golden on top.
  2. Let it cool slightly before slicing. Serve warm or at room temperature.

Notes

This quiche keeps well in the fridge for about 3–4 days. It also freezes beautifully for up to 3 months. For reheating, warm it in the oven or microwave until heated through.
