Ingredients
  

Vegetables
  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 1 medium Bell Pepper, chopped
  • 4 cups Fresh Spinach, washed and chopped
Dairy
  • 1 cup Cottage Cheese
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Milk
  • 6 large Eggs
Seasonings
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onion and bell pepper, sauté until softened (about 5 minutes).
  4. Toss in the spinach and cook until wilted.
Mixing
  1. In a mixing bowl, combine cottage cheese, eggs, cheddar cheese, milk, garlic powder, and Italian seasoning. Blend well.
  2. Season with salt and pepper to taste.
Cooking
  1. Pour the egg mixture into the skillet with veggies.
  2. Cook on the stovetop for 3-5 minutes until the edges begin to set.
  3. Transfer the skillet to the oven and bake for 25-30 minutes until the center is set and slightly golden.

Notes

Pair with a crunchy side salad or toasted whole-grain bread. For best results, let leftovers cool before storing in an airtight container and keep in the fridge for 3-4 days.
