Preparation
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it.
- In a large bowl, mash the bananas. Add eggs, cottage cheese, maple syrup, and vanilla; mix well.
- Gradually add almond flour, baking soda, and cinnamon; stir until combined.
- Fold in any optional mix-ins.
- Pour the batter into the prepared pan and smooth the top.
Baking
- Bake for about 50 minutes, covering loosely with foil if browning too quickly.
- Check doneness with a toothpick; if it comes out clean, the bread is done. If wet, bake longer.
Cooling
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
This banana bread can be stored tightly wrapped for a week in the fridge, or frozen for up to 3 months. Warm a slice in the microwave for 15-20 seconds before enjoying.
