  • 2 pieces ripe bananas, mashed Use overly ripe bananas for extra sweetness.
  • 3 pieces eggs
  • ½ cup cottage cheese Whipped for a creamier texture (optional).
  • 3 tablespoons maple syrup Adjust to taste for sweetness.
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 2 ½ cups almond flour Can be replaced with all-purpose or regular flour.
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon Add more spices like nutmeg or ginger for flavor.
Optional Mix-Ins
  • ½ cup walnuts or chocolate chips or blueberries Feel free to use any of these options for added taste.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it.
  2. In a large bowl, mash the bananas. Add eggs, cottage cheese, maple syrup, and vanilla; mix well.
  3. Gradually add almond flour, baking soda, and cinnamon; stir until combined.
  4. Fold in any optional mix-ins.
  5. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for about 50 minutes, covering loosely with foil if browning too quickly.
  2. Check doneness with a toothpick; if it comes out clean, the bread is done. If wet, bake longer.
Cooling
  1. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This banana bread can be stored tightly wrapped for a week in the fridge, or frozen for up to 3 months. Warm a slice in the microwave for 15-20 seconds before enjoying.
