Preparation
  1. In a blender, combine the cottage cheese, banana, rolled oats, eggs, baking powder, vanilla extract, and salt. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease if necessary.
Cooking
  1. Pour small amounts of the batter onto the skillet to form bite-sized pancakes.
  2. Cook for 2-3 minutes on each side or until golden brown.
  3. Remove from skillet and serve warm or let cool for meal prep.

Notes
