- In a large bowl, combine the black beans, black-eyed peas, corn, bell peppers, cherry tomatoes, red onion, avocado, and cilantro.
- Squeeze the lime juice over the mixture, and season with salt and pepper to taste.
- If desired, drizzle on some Greek or Italian dressing for an extra oomph of flavor.
- Stir gently to combine all the goodies together.
- Serve immediately as a dip with tortilla chips or as a side dish for your BBQ.
Notes
Store in an airtight container in the fridge for about 3-5 days. If made ahead of time, give it a good stir before serving to mix the flavors back together. Chill for an hour before serving to enhance flavors.
