Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can black-eyed peas, rinsed and drained
  • 1 cup corn (fresh or canned)
  • 1 piece red bell pepper, diced
  • 1 piece green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 piece red onion, finely chopped
  • 1 piece avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes lime juice Don't skip this for extra flavor!
  • to taste salt and pepper
  • optional Greek or Italian dressing For extra flavor

Method
 

Preparation
  1. In a large bowl, combine the black beans, black-eyed peas, corn, bell peppers, cherry tomatoes, red onion, avocado, and cilantro.
  2. Squeeze the lime juice over the mixture, and season with salt and pepper to taste.
  3. If desired, drizzle on some Greek or Italian dressing for an extra oomph of flavor.
  4. Stir gently to combine all the goodies together.
  5. Serve immediately as a dip with tortilla chips or as a side dish for your BBQ.

Notes

Store in an airtight container in the fridge for about 3-5 days. If made ahead of time, give it a good stir before serving to mix the flavors back together. Chill for an hour before serving to enhance flavors.
