Ingredients
  

For the biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup cold unsalted butter, cubed Keep cold for flakiness.
  • 1 cup shredded cheddar cheese
  • 3/4 cup buttermilk Can substitute with milk + vinegar or lemon juice.
For the crab filling
  • 1 cup cooked and seasoned crab meat Can use frozen crab meat, thawed and drained.
  • 1/4 cup green onions, chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons lemon juice
For the glaze
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon lemon zest Don't skip for flavor enhancement.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in cheddar cheese and buttermilk until just combined; don’t overmix!
Filling the biscuits
  1. In another bowl, mix the crab meat, green onions, mayonnaise, Old Bay seasoning, and lemon juice.
  2. Scoop out biscuit dough, flatten it slightly, and place a spoonful of crab mixture in the center.
  3. Fold the dough over to create delicious pockets.
Baking
  1. Place the stuffed biscuits on a baking sheet lined with parchment paper.
  2. Bake for about 15-20 minutes or until golden brown.
  3. Mix melted butter with lemon zest and brush over warm biscuits before serving.

Notes

Store in an airtight container in the fridge for up to 3 days. Reheat in oven for 5-10 minutes. For freezing, bake, cool, and then freeze. Reheat from frozen with added time.
