Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in cheddar cheese and buttermilk until just combined; don’t overmix!
Filling the biscuits
- In another bowl, mix the crab meat, green onions, mayonnaise, Old Bay seasoning, and lemon juice.
- Scoop out biscuit dough, flatten it slightly, and place a spoonful of crab mixture in the center.
- Fold the dough over to create delicious pockets.
Baking
- Place the stuffed biscuits on a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes or until golden brown.
- Mix melted butter with lemon zest and brush over warm biscuits before serving.
Notes
Store in an airtight container in the fridge for up to 3 days. Reheat in oven for 5-10 minutes. For freezing, bake, cool, and then freeze. Reheat from frozen with added time.
