  • 2 tablespoons lemon juice Freshly squeezed is best
  • 2 tablespoons olive oil For cooking the salmon

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then place them in the skillet skin-side down.
  3. Cook for about 5 minutes until golden brown.
  4. In a bowl, combine the heavy cream, chopped chives, and lemon juice. Mix well.
  5. Pour the cream mixture over the salmon in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through.
Serving
  1. Serve hot with your favorite sides like buttery mashed potatoes, crisp green beans, and a fresh salad.

Notes

Watch the salmon closely as it bakes; you want it flaky, not dry. Store leftovers in the fridge for about 2 days, or freeze for longer storage but expect a change in texture.
