  • 2 pieces boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 cups ramen noodles
  • 1 cup mixed vegetables (e.g., carrots, bell peppers, snow peas)
  • 2 tablespoons soy sauce
  • salt and pepper to taste
  • Chopped green onions for garnish

Method
 

Cooking
  1. In a large pot, bring chicken broth to a boil.
  2. Add ramen noodles and cook according to package instructions. Drain and set aside.
  3. In the same pot, add a little oil and sauté the minced garlic until fragrant.
  4. Add the chicken breasts and cook until no longer pink in the center. Remove from the pot, shred the chicken, and set aside.
  5. Pour in the heavy cream and soy sauce, stirring to combine.
  6. Add the mixed vegetables and cook until just tender.
  7. Stir in the cooked ramen and shredded chicken. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions.

Notes

For a spicy twist, add sriracha or gochujang while cooking. Swap heavy cream for coconut milk for a lighter version with a tropical flair. Use any veggies you have on hand; it’s all about that personal touch!
