- In a large pot, bring chicken broth to a boil.
- Add ramen noodles and cook according to package instructions. Drain and set aside.
- In the same pot, add a little oil and sauté the minced garlic until fragrant.
- Add the chicken breasts and cook until no longer pink in the center. Remove from the pot, shred the chicken, and set aside.
- Pour in the heavy cream and soy sauce, stirring to combine.
- Add the mixed vegetables and cook until just tender.
- Stir in the cooked ramen and shredded chicken. Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
For a spicy twist, add sriracha or gochujang while cooking. Swap heavy cream for coconut milk for a lighter version with a tropical flair. Use any veggies you have on hand; it’s all about that personal touch!
