Ingredients
  

Pasta and Salmon
  • 8 oz pasta of your choice
  • 2 fillets salmon
Creamy Sauce
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
Vegetables and Seasoning
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Cook pasta according to package instructions; drain and set aside.
Cooking Salmon
  1. In a large skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper and add to the skillet.
  2. Cook for about 4-5 minutes per side until cooked through. Remove salmon and set aside.
Making Sauce
  1. In the same skillet, add garlic and sauté until fragrant.
  2. Add heavy cream and bring to a simmer. Stir in Parmesan cheese and mix until melted and smooth.
  3. Add fresh spinach and stir until wilted.
Combining
  1. Flake the salmon and return it to the skillet.
  2. Combine with cooked pasta and toss to coat.
  3. Garnish with parsley if desired and serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days. Reheat on the stovetop or in the microwave until warmed through. For a lighter version of the sauce, consider using half-and-half or Greek yogurt.
