Preparation
- Cook pasta according to package instructions; drain and set aside.
Cooking Salmon
- In a large skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper and add to the skillet.
- Cook for about 4-5 minutes per side until cooked through. Remove salmon and set aside.
Making Sauce
- In the same skillet, add garlic and sauté until fragrant.
- Add heavy cream and bring to a simmer. Stir in Parmesan cheese and mix until melted and smooth.
- Add fresh spinach and stir until wilted.
Combining
- Flake the salmon and return it to the skillet.
- Combine with cooked pasta and toss to coat.
- Garnish with parsley if desired and serve immediately.
Notes
Leftovers can be stored in an airtight container in the fridge for about 3-4 days. Reheat on the stovetop or in the microwave until warmed through. For a lighter version of the sauce, consider using half-and-half or Greek yogurt.
