  • 1 cup feta cheese, crumbled Alternatively, goat cheese can be used.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Don't skip this step; it enhances the dish's fragrance.
  • Optional grated Parmesan cheese for serving

Preparation
  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Cooking
  1. Toss in the fresh spinach and cook until wilted.
  2. Stir in the cooked gnocchi and crumbled feta cheese.
  3. Season with salt and pepper to taste.
  4. Cook until everything is heated through, about 3-4 minutes.
  5. Serve warm, topped with grated Parmesan cheese if desired.

Notes

For a burst of brightness, consider adding a splash of lemon juice. This dish can also be adapted by adding grilled chicken or shrimp for protein, or using plant-based cheese and almond milk for a vegan option. Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for up to a month.
