  • 1/2 cup breadcrumbs

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Cook the rice according to package instructions.
  3. In a bowl, mix minced garlic, breadcrumbs, salt, and pepper.
  4. Beat the egg in another bowl.
Cooking
  1. Dip chicken breasts in the egg, then coat with the breadcrumb mixture.
  2. Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  3. Transfer chicken to a baking dish and finish cooking in the oven for about 15-20 minutes.
Serving
  1. Serve the crispy garlic chicken over fluffy rice and garnish with fresh parsley.

Notes

For extra crunch, consider double-dipping the chicken in egg and breadcrumbs. You can swap chicken for tofu or tempeh for a vegetarian twist. Make sure your oil is hot enough before frying to achieve a golden crust.
