Ingredients

Main Ingredients
  • 2 lbs Yukon Gold potatoes (scrubbed and cut into 1-inch cubes)
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon cornstarch For coating the potatoes
  • 4-5 cloves fresh garlic (minced) Add in the second roasting stage
  • 2 teaspoons dried herbs (thyme, oregano, rosemary) Mix of herbs for flavor
  • 1/2 cup aged Parmesan cheese (grated) Add at the end for melted topping
  • Kosher salt To taste
  • Black pepper To taste

Method

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Scrub potatoes and cut them into uniform 1-inch cubes.
  3. Place cut potatoes in a large bowl and sprinkle with cornstarch. Toss until every piece is lightly coated in a white dust.
  4. Drizzle olive oil over potatoes. Add salt, pepper, and dried herbs. Toss until potatoes are glistening but not floating in oil.
Roasting
  1. Spread potatoes in a single layer on a lined baking sheet. Do not crowd the pan.
  2. Roast for 20 minutes.
  3. Remove the pan and stir or shake potatoes. Add minced fresh garlic and toss to distribute.
  4. Return to oven and roast for another 10-15 minutes until the edges are golden brown.
  5. Remove from oven and sprinkle grated Parmesan cheese evenly over the hot potatoes.
  6. Return to the oven for 2-3 minutes until cheese is melted and slightly bubbly.
  7. Let rest on the pan for 5 minutes to allow cheese to set, then serve immediately.

Notes

Cut potatoes the same size for even cooking. Toss the garlic in halfway through roasting for the best flavor without burning it. Use fresh herbs for enhanced flavor. Vary the cheese as desired.
