  • 1 pound shrimp, peeled and deveined
  • 1/2 cup breadcrumbs Consider using panko for extra crunch.
  • 1/2 cup corn starch
  • 1 large egg
  • 2 tablespoons green onions, chopped Adds a fresh kick.
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • as needed oil for frying Heat oil to 350°F (175°C).
  • as needed sweet chili sauce For serving.

Method
 

Preparation
  1. Get your frying oil hot.
  2. In a food processor, pulse the shrimp until coarsely chopped.
  3. In a bowl, mix the chopped shrimp with breadcrumbs, corn starch, egg, green onions, garlic powder, salt, and pepper until well combined.
  4. Shape the mixture into small balls.
Cooking
  1. Heat oil in a deep fryer or large pot to 350°F (175°C).
  2. Fry the shrimp balls in batches until golden brown, about 3-4 minutes.
  3. Remove and drain on paper towels.
Serving
  1. Serve with sweet chili sauce.

Notes

Chill the mixture for about 30 minutes for easier handling. For a spicy kick, consider adding some chili flakes. Don't overcrowd the frying pan.
