  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Oil for frying

Method
 

Preparation
  1. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  2. In a mixing bowl, combine zucchini, salt, flour, Parmesan, herbs, egg, garlic powder, and black pepper.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  3. Fry for 3-4 minutes on each side until golden brown.
  4. Remove and drain on paper towels.

Notes

Serve warm with yogurt dip or your favorite sauce. For storage, fritters can be kept in the fridge for about 3 days or frozen for later use.
