- Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine zucchini, salt, flour, Parmesan, herbs, egg, garlic powder, and black pepper.
Cooking
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
- Fry for 3-4 minutes on each side until golden brown.
- Remove and drain on paper towels.
Notes
Serve warm with yogurt dip or your favorite sauce. For storage, fritters can be kept in the fridge for about 3 days or frozen for later use.
