  • 2 medium zucchinis, grated Grated and moisture squeezed out
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour Can be substituted with gluten-free blend
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh herbs (like parsley or basil)
  • 1 large egg Can be substituted with flaxseed meal for vegan
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Oil for frying For frying the fritters
  • Dipping sauce (optional) Recommended: tzatziki, ranch, or aioli

Method
 

Preparation
  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini with salt and let it sit for about 10 minutes.
  3. Add flour, grated Parmesan cheese, fresh herbs, egg, garlic powder, and black pepper to zucchini. Mix until well combined.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Drop spoonfuls of the mixture into the hot oil and flatten them slightly.
  3. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  4. Remove from skillet and place on a paper towel to drain excess oil.
Serving
  1. Serve warm with your favorite dipping sauce.

Notes

Patience is key: Allow the grated zucchini to drain well; excess moisture leads to soggy fritters. You can experiment with different dips for variety. For added heat, try adding cayenne pepper.
