Ingredients
  

Main ingredients
  • 6 large large eggs
  • 1 cup whole milk can substitute with half-and-half
  • 1 cup heavy cream can use half-and-half or Greek yogurt as a substitute
  • 1 cup shredded Gruyere or cheddar cheese can experiment with different cheese types
  • ½ cup cooked bacon or ham (chopped) can omit for a meatless version
  • ½ cup chopped spinach
  • ½ cup chopped onion
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onion and spinach until soft.
  3. In a medium bowl, whisk together eggs, milk, heavy cream, salt, and black pepper.
  4. Stir in bacon or ham and the sautéed veggies.
  5. Fold in shredded cheese.
  6. Transfer the mixture to a greased pie dish or baking pan.
  7. Bake for about 30-35 minutes until set and golden.
  8. Allow to cool slightly before slicing and serve warm.

Notes

This quiche can be stored in the fridge for 3-4 days and frozen for up to 3 months. Serve warm with fresh herbs on top and a side salad.
