Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onion and spinach until soft.
- In a medium bowl, whisk together eggs, milk, heavy cream, salt, and black pepper.
- Stir in bacon or ham and the sautéed veggies.
- Fold in shredded cheese.
- Transfer the mixture to a greased pie dish or baking pan.
- Bake for about 30-35 minutes until set and golden.
- Allow to cool slightly before slicing and serve warm.
Notes
This quiche can be stored in the fridge for 3-4 days and frozen for up to 3 months. Serve warm with fresh herbs on top and a side salad.
