  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach (fresh or frozen) Use fresh for vibrant flavor, but frozen works too; squeeze out moisture.
  • 1/2 cup chopped onion
  • Salt and pepper to taste
  • Olive oil For greasing the baking dish

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with a drizzle of olive oil.
  3. In a mixing bowl, whisk together the ricotta cheese, eggs, and milk until smooth.
  4. Stir in the grated Parmesan cheese, spinach, onion, salt, and pepper.
  5. Pour the mixture into the greased baking dish, spreading it evenly.
Cooking
  1. Bake for 35-40 minutes, or until the quiche is set and lightly golden on top.
  2. Let it cool slightly before slicing and serving.

Notes

This quiche stays fresh in the fridge for up to 3-4 days and freezes beautifully for about 2-3 months. Reheat in the oven for best results. Don't skip the cooling step for better slicing.
