Method
 

Preparation
  1. In a mixing bowl, mash the hard-boiled eggs with a fork until somewhat smooth.
  2. Stir in the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until well combined.
  3. Adjust seasoning if necessary.
  4. Transfer to a serving bowl and sprinkle with paprika and chives or green onions if using.
  5. Serve with crackers, fresh vegetables, or on toast.

Notes

For chunkier texture, mash less. Variations include adding avocado or using chipotle powder for a smoky flavor. This dip lasts in the fridge for up to 3 days in an airtight container.
