Ingredients
  

For the Soup Base
  • 2 cups Lobster stock Can substitute with fish or vegetable stock
  • 1 cup Lobster meat Fresh lobster is preferred
  • 1 tablespoon Butter For sautéing
  • 1 cup Heavy cream Adds creaminess
  • 1 medium Onion, chopped For flavor base
  • 1 medium Carrot, chopped Adds sweetness
  • 1 stalk Celery, chopped For additional flavor
  • 2 cloves Garlic, minced Enhances flavor
  • 1 tablespoon Tomato paste Adds depth of flavor
  • 2 tablespoons Cognac For flavor infusion
  • 1 leaf Bay leaf For aromatic flavor
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste
  • 2 tablespoons Fresh parsley, chopped For garnish

Method
 

Preparation
  1. In a large pot, melt butter over medium heat.
  2. Add chopped onion, carrot, celery, and garlic; sauté until softened.
  3. Toss in the lobster shells and tomato paste; cook for a few minutes.
  4. Pour in cognac and allow it to reduce.
  5. Add lobster stock, bay leaf, salt, and pepper; bring to a simmer.
  6. Let it simmer for 30 minutes.
  7. Remove the shells and strain the bisque.
  8. Stir in heavy cream and lobster meat; heat through.
  9. Serve hot, garnished with fresh parsley.

Notes

Store in an airtight container for up to 3 days in the fridge or up to 2 months in the freezer. Reheat gently on the stove to maintain creaminess.
