  • 1 medium Fresh cucumber Use English cucumbers for best results.
  • 8 oz Cream cheese Let it soften for easy spreading.
  • 8 slices Soft bread Whole grain or sourdough are great options.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 2 tbsp Fresh dill or other herbs Optional, but adds flavor.

Method
 

Preparation
  1. Start by washing and slicing the cucumber thinly.
  2. In a bowl, mix the cream cheese with salt, pepper, and any herbs you like to taste.
  3. Spread the cream cheese mixture evenly on one side of each slice of bread.
  4. Layer cucumber slices on top of the cream cheese on half of the bread slices.
  5. Place the other half of the bread on top and press gently.
  6. Cut the sandwiches into quarters or triangles.
  7. Serve immediately or refrigerate until serving.

Notes

These sandwiches are best enjoyed fresh, but you can store them in the fridge for about 2 hours. Assemble without cucumbers if prepping ahead, and add cucumbers just before serving.
