Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
Wet Ingredients
  • 1/4 cup olive oil
  • 1 cup milk Can substitute with almond or oat milk for a vegan option.
Flavor Additions
  • 2 cloves garlic, minced Toasting the garlic enhances the flavor.
  • 2 tablespoons fresh rosemary, chopped Can be replaced with thyme or basil.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the flour, baking powder, salt, and sugar.
  3. In another bowl, mix the milk and olive oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the minced garlic and chopped rosemary.
Baking
  1. Grease a muffin tin and fill each cup about two-thirds full with the batter.
  2. Bake for 15-20 minutes or until golden brown.
  3. Let cool slightly before removing from the tin. Serve warm.

Notes

These muffins can be stored in an airtight container in the fridge for about 3-4 days. Freeze them for up to three months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F (175°C) for about 5 minutes.
