  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise Swap with vegan mayo for vegan option.
  • 1/4 cup cotija cheese, crumbled Feta can be used as a substitute.
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder Add extra for a spicier kick.
  • to taste Fresh cilantro, for garnish

Method
 

Preparation
  1. Preheat a grill to medium-high heat.
  2. In a bowl, mix together the olive oil, salt, and pepper. Brush this mixture over the corn.
Cooking
  1. Place the corn on the grill and cook, turning occasionally, until charred and tender (about 10-15 minutes).
Sauce Preparation
  1. In a separate bowl, combine mayonnaise, cotija cheese, lime juice, and chili powder.
Serving
  1. Once the corn is grilled, remove it from heat and slather the mayo mixture over the corn.
  2. Garnish with fresh cilantro and serve immediately.

Notes

Leftovers keep in the fridge for about 3 days. Reheat in the oven or on the grill for best results. Try experimenting with toppings like paprika or smoked paprika for added flavor.
