  • 1 pound ground beef
  • 1 pound chorizo sausage
Canned Goods
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
Vegetables
  • 1 onion, chopped
  • 2 cloves garlic, minced
Spices
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
For Cooking
  • 2 tablespoons olive oil For cooking the onions and garlic

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sautéing until softened.
  3. Add ground beef and chorizo to the pot, cooking until browned.
  4. Stir in chili powder, cumin, paprika, salt, and pepper.
  5. Add the diced tomatoes and both types of beans, mixing well.
  6. Bring the chili to a simmer, cooking for 20-30 minutes to allow flavors to meld.
  7. Serve hot, garnished with cilantro or cheese if desired.

Notes

You can adjust the spice level by adding or reducing the chili powder. Let it simmer a bit longer for deeper flavors.
