  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella) Choose your preferred type of cheese.
  • 1/4 cup chopped fresh herbs (like chives or parsley) Feel free to mix different herbs.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  2. In a mixing bowl, whisk together the ricotta, eggs, shredded cheese, chopped herbs, salt, and pepper until well combined.
Baking
  1. Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  2. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  3. Let cool slightly, then remove from the muffin tin and serve warm or at room temperature.

Notes

These bites can be served with a sprinkle of fresh herbs, a zesty salad, sliced avocado, or crispy bacon. They can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat in the microwave or oven at a low temp to keep them fluffy.
