Ingredients

For the Curry
  • 1 tbsp coconut oil
  • 3 pieces chicken breasts sliced in half
  • 1 tsp salt & pepper to taste
  • 1 tsp chili powder
  • 3 cloves garlic minced
  • 1 tbsp minced ginger
  • 1 piece red bell pepper sliced
  • 3 tbsp Thai red curry paste taste to adjust spice level
  • 1 tsp brown sugar
  • 1 can coconut milk 400ml
  • 3 pieces bok choy roughly chopped
  • 1 piece lime juice of one
  • 1 handful cilantro for garnish
  • as needed rice for serving

Method

Preparation
  1. If you're serving with rice, start cooking it in a rice cooker or on the stove according to package instructions.
  2. Prep your chicken by slicing the breasts in half to make 6 thin cutlets. Season with salt, pepper, and chili powder.
  3. Mince your garlic and ginger, slice the red bell pepper into thin strips, and roughly chop the bok choy.
Cooking
  1. In a pan on medium heat, add coconut oil and cook the chicken for a few minutes on each side until golden and cooked through. Remove and set aside.
  2. In the same pan, add garlic, ginger, and red pepper. Sauté until slightly softened, adding more coconut oil if needed.
  3. Add the red curry paste and brown sugar. Cook for 1-2 minutes before adding the coconut milk and stirring.
  4. Bring to a simmer and add the bok choy. Cook for a few more minutes until the bok choy softens to your liking.
  5. Season with salt, pepper, a pinch of red pepper flakes, and juice from a whole lime.
  6. Serve with rice, sliced chicken, and garnish with fresh cilantro.

Notes

This dish can be stored in the fridge for about 3-4 days. It also freezes well for up to 3 months. Don't skip toasting the garlic for added flavor. Batch cook for ready-to-eat lunches.
